Debi & Jason here with Boneafide Charters in the Florida Keys.
Every week we bring you a fishing report and what’s biting down here in paradise. Well, it’s still raining so we
are changing things up a little bit this week.
We are sharing some of our favorite recipes and island creations we love sharing with our clients.
We will include the full recipes so you too can create some amazing, fresh seafood creations.

BAKED LOBSTER CILANTRO BUTTER
Ring tail
Split it IN 1/2
Rinse and dry
Place on baking sheet
Olive oil
Cilantro
Lime
Butter
Bake lobster face up 300 for 5 to 8 minutes
PINEAPPLE OR MANGO SALSA
Pineapple or mango
Small sweet colored peppers
Onion
Orange
Cilantro
Lime
Jalapeño
chop and mix all together. Add salt pepper if needed
RITZY FISH WITH COCONUT JASMIN RICE
6 Grouper fillets
Yum yum sauce
1 Box Ritz crackers
Salt pepper
Lime
Cut Uncooked fresh fish into small pieces
Rinse and dry. (Fresh Water makes mushy fish)
Put into a zip lock bag. Add yum yum sauce and shake well so all the fish it coated.
Place in refrigerator for an hour or two
In a food processor crumb the ritz until fine
Set aside
Cook rice using instruction
Usually 2/1
Substitute 1 cup of water for 1 can of coconut milk
Add salt and pepper.
Pineapple salsa
Chop pineapple
Onion
Sweet and jalapeño Peppers (cut and seeded) (get a planter and some dirt) throw the seeds in the dirt. They are easy to grow.
Save 6 peppers for garnish
Save 1 wedge of pineapple for garnish
Hand chop cilantro
Add lime, salt, pepper.
Mix all together and let marry for at least an hour
Add the remaining to boiling rice
Baking the fish
Lay fish on flat pan
Put the ritz in a bowl
Coat fish with ritz in a light dust
Broil until golden turn the oven to bake and cook about 6 minutes. Test by firmness.
Broil the cut peppers and pineapple at the same time. Add olive or coconut oil.
Plating
Take a small bowl and spray with Pam
Fill up with rice
Put your plate on top. Middle. Food side down.
Flip it.
Set fish to go around the plate
Alternate pepper and pineapple
Top rice with salsa and either pineapple lime or parsley. Or all 3!
