Florida waters are home to 3 species of Mackerel - King, Spanish and Cero Mackerel have all been coming in hot to the docks at Pelican Adventures on the Destin Harbor. Come fishing with us on one of our fishing boats to reel in the fun with a mackerel fight! Mackerels are plentiful along the Emerald Coast late March through November swimming the shallow surfs and along the reefs in the Gulf of Mexico. Kingfish (King Mackerel) are the biggest of the 3 species and have a minimum size limit of 24' to the fork tail, with a bag limit of 2 per person per day. Cero Mackerel is the least common of the 3, but many say the best tasting. This mackerel has no size limit or bag limit. The Spanish Mackerel, is what you generally think of when you hear "mackerel" in Florida. The Spanish has a min size limit of 12" to the fork and a bag limit of 15 fish per person per day. Smoked Fish Dip First, soak fish overnight in a brine solution: 1 cup salt 1 cup brown sugar 1 cup lemon juice 2 cups Ketchup 1/2 cup Worcestershire sauce 1 can beer 1 tablespoon red pepper 2 or 3lbs fish Wash and dry fish, Smoke fish over hickory chips. Once you have the fish smoked let cool and crumble the fish with your hands into a bowl and add: 8oz sour cream 1 cup Duke’s Mayo 1 large onion sauteed 4 tablespoons pickle relish Pepper to taste If you like it kicked up a little, dust the fish with Jerk Seasoning or Tony Chachere’s Creole seasoning before you smoke the fish
